Welcome to our Family winery!

The Castillon family has already been pacing this terroir for 4 generations. We are located on the South side of the Costières de Nîmes, facing Camargue and the Mediterranean Sea, which brings our wines delicacy and originality.

Being environmentally responsible is the first commitment of “Château l’Ermite d’Auzan”.

We share the values of organic farming and got our certification in 2020. 

With Tanguy's arrival, we decided to go further and begin biodynamic farmingpermaculture and the production of our own inputs. 

This is our gift for the next generations: make our vineyard and our planet cleaner and healthier.

Vineyard and grapes

Our vineyard benefits from a typically Rhone-like terrain with a soil made up of rolled pebbles. 

The estate’s total surface covers 80 hectares of sunny south facing vineyard head on to the Sea. In Summer, it benefits from the refreshing breezes of the Mediterranean climate which retains fresh pure fruit and enlarges the aromatic and taste range.

Viognier is harvested at the end of August. This grape variety is drought-resistant and enjoys poor stony soils. It is inclined to mildew and needs maximum sun to develop its expressive aromas.

Aromas :violet, honey, apricot, hawthorn, acacia, musk, peach.

White Grenache is harvested in early September. This variety is wind-resistant and enjoys dry and stony soils. Although inclined to mildew, dead arm disease and botrytis, White Grenache ishighly resistant to drought. This variety produces very dry wines. 

Aromas :white flowers, white fruits (very ripe peach).

Roussanne is harvested at the end of August. It has to be hot all summer so that itsexpressive aromas can develop. Difficult to grow and very delicate, Roussanne is sensitive to powdery mildew and botrytis. It is characterized bythe intensity of its aromas.

Aromas: Dried fruits (nuts), hawthorn, apricot, green coffee, honeysuckle, honey, narcissus, Iris roots. 

Muscat Petits Grains is harvested mid-August. It reaches its best quality when it grows on pebbly hill sidesbordering the sea. Heavy summer heat is reduced by sea humidity which results in a higher concentration of sugar in grapes. Muscat Petits Grains is extremely delicate and sensitive to diseases and pests (bees, caterpillars…).

Aromas: musk, rose, raisins, dry apricot, grapefruit, lychee, exoctic fruits, white flowers, lemongrass.

Black Grenache is harvested at the end of September. It reaches its best quality when it grows on hot and dry poor pebbly soils. Although it is very sensitive to arm disease, botrytis, bacterial diseases and mildew, it is drought-resistant.

Aromas: red fruits, spices, cocoa, prune, black ripe fruits. Its aromas evolve towards dry fruits, mocha, cherry brandy.

Mourvèdre is harvested in the early October. It needs a lot of heat and sunlight and usually grows coastal areas. Mourvèdre is very sensitive to Mildew and powdery Mildew but its skin thickness protects it from arm disease and Botrytis blight. The older the wine gets, the stronger its aromas. 

Aromas: undergrowth, candied fruits, truffle, liquorice, leather, musk, pepper, soft spices, resin, game.

Syrah is harvested mid-September. It is highly sensitive to limestone and several diseases (Botrytis blight, chlorosis) and pests (mites,leafhopper, caterpillars). It also needs a lot of heat and sun. It produces loog-keeping wines and very expressive aromas.

Aromas : red and black fruits (cherry, raspberry, blackcurrant), violet, spices, pepper, smoked truffle, lether, liquorice, musk, peppery mint, coffee bean, tobacco, venison, humus, smoke, tarn, chocolate.

Coming from Provence, Cinsault is an old grape variety with black skin and black flesh. Nowadays, we use this grape with a lighter color to produce Rosé (it became a staple of the Rosés wines from Provence, Rhône Valley or Languedoc). Cinsault makes fruity, fresh and light wines.

Aromas: Red fruits, raspberry, white flowers and rose.

Château l'Ermite d’Auzan was founded in the 12th century by the hermits of Ste Cécile d’Estagel Abbey. It is situated on the pilgrimage road of Santiago de Compostella and hermits used to produce wine for pilgrims. The first winery of Château l'Ermite d'Auzan was built in the early 1800. 

Today, our 80ha wine estate enjoys international renown.
